Most of the fat and calories in a slice of pumpkin pie can be blamed on the crust. Skip it and try this slimmed down version of light and airy Pumpkin Mousse.
Ingredients
1cupcashews unsalted raw
½cuppecan pieces, raw
1cuppumpkin puree
2tablespoonscoconut oil
½cupFruitSweet- or agave syrup, maple syrup or honey
½cupwater
¼teaspoonKosher Salt
¼teaspoonground allspice
¼teaspoonground ginger
⅛teaspooncloves- ground
1teaspooncinnamon
Suggested Toppings (choose one)
Cinnamon
Fresh mint leaves
Low Fat Yogurt
Granola, Nuts or Seeds
Instructions
Combine all ingredients in blender; puree on high speed until smooth.
Use a rubber spatula or pastry bag to transfer the mixture into half cup creme brulee ramekins
Chill to refrigerator temperature.
Serve cold, garnished with a light dusting of cinnamon and a sprig of mint.
