3poundsred bliss potatoes- partially peeled is best
1cupfat free sour cream
¼cupGreek yogurt- plain, fat-free
½cupdill- fresh, chopped
½teaspoonblack pepper- fresh ground
1teaspoonSplenda Granulated Sweetener
¼cupapple cider vinegar
1teaspoonDijon mustard- low-sodium or no salt added
1tablespoonstone-ground mustard- low-sodium or no salt added
Instructions
Place a large saucepan filled two-thirds with water over high heat.
Cut potatoes into 1-inch pieces or thin slices. Add potatoes to water, cover, and bring to a boil. Reduce heat to medium-high; cook 5-10 minutes or until tender, but not soft or falling apart. Drain and chill.
In a large bowl, mix remaining ingredients until well combined. Chill.
When potatoes are cool, add to bowl with dressing, gently combine, and chill for at least 1 hour before serving.
