When paired with tomato and basil, spaghetti squash is a darn good replacement for spaghetti. Think of it as faux-pasta. This is good chilled, as a salad, and warm as an entree.
Ingredients
2wholespaghetti squashhalved and deseeded
1cuptomatoesdiced
½cupfresh basilcut into thin strips
½cupPritikin Italian Sunshine Salad Dressing
Instructions
Preheat oven to 400 degrees.
Place spaghetti sauce, cut side down, on a baking tray and bake until soft (about 25 minutes).
Use a spoon to scoop out the inside of the squash, and cool / chill.
Toss diced tomatoes with basil and combine with squash and your favorite Low Fat Reduced Calories Salad Dressing.

Pritikin actually serves this with an Asian dressing, but we like this warm, with Low Calorie Italian Dressing. Pritikin has its own, for both flavors, which is 10 calories for two tablespoons, but we calculated using a store-bought Low Fat Italian Dressing.
