Universally enjoyed by every member of our staff and families. Pritikin Caesar Salad is great as a side dish or entree salad, with grilled chicken.
Ingredients
For the Dressing

silken tofu
(reduced calorie)
▢
¼
cup
fresh lemon juice
▢
¾
tablespoon
Angostura Worcestershire sauce
▢

tablespoons
Dijon mustard
, no-salt-added
▢

cups
white balsamic vinegar
▢

tablespoons
garlic finely minced
▢

100% apple juice concentrate
(found in freezer sections) thawed, undiluted

water
For the Salad
▢

cups
chopped Romaine lettuce
▢

teaspoon
Parmesan cheese, grated
Instructions
In a food processor or blender, combine all dressing ingredients
Process until dressing is completely smooth and creamy.
Toss salad greens with enough dressing to coat
Sprinkle in Parmesan
Divide into 2 servings of 2 cups each
Refrigerate remaining dressing, if you didn't use it all
