Spinach Ham Quiche with Vegetarian Option

This started life as a Vegetarian Spinach Quiche recipe for the now closed Mandala Wellness Retreat in Georgia. Each Monday night the hosts gathered with friends to make a Vegetarian Supper and this was voted the best spinach quiche recipe. We updated it with fresh spinach leaves in place of frozen and chopped cooked ham, but either with meat or vegetarian, it’s a winner.

Spa Spinach Ham Quiche

Serves: 6-8
  • 1/3 cup butter
  • 3 cloves chopped garlic
  • 1 small onion chopped
  • 1 10 oz package frozen spinach (thawed and drained) or 1 large bag of spinach leaves
  • 1 cup chopped cooked ham
  • 3/4 cup fresh mushrooms sliced
  • 1 6 oz package herb and garlic feta - crumbled
  • 1 8 oz package mild cheddar or mixed cheeses w/cheddar
  • salt and pepper to taste
  • 1 (9 in) unbaked deep dish pie crust
  • 4 eggs, beaten
  • 1 cup milk
  1. Preheat over to 375 degrees.
  2. In a medium skillet, melt butter slowly. Sauté garlic and onion in butter until lightly browned.
  3. Stir in spinach, mushrooms, feta and 1/2 the cheese.
  4. Add chopped ham, if using, and stir just until warmed.
  5. Season with salt and pepper.
  6. Spoon mixture into pie crust.
  7. In a medium bowl, whisk together eggs and milk, a little salt and pepper, and pour into the pastry shell, allowing egg mixture to combine with spinach ham mixture thoroughly.
  8. Pre bake for 15 minutes and then sprinkle the top with the remaining cheddar.
  9. Bake an additional 35 to 40 minutes until set (firm) in center.
  10. Allow to stand 10 minutes before serving.
