Southwest Grits | Movara Fitness Resort

Serves: 6-7 cups
  • 1/3 cup diced red onion
  • 1/3 cup diced peppers
  • ½ Jalapeno diced
  • 2 cloves garlic minced
  • 1/3 cup diced tomatoes
  • 3 cups chicken stock
  • 1 cup uncooked polenta
  • 2 teaspoons butter
  • 2 slices turkey bacon
  • 2 oz. cheddar cheese
  • salt and pepper to taste
  1. Sauté onions, garlic, and peppers together until soft.
  2. Add chicken stock and polenta and bring to a low simmer for 5-8 minutes.
  3. Add in tomatoes, butter and season with salt and pepper.
  4. Brown bacon and dice.
  5. Serve 1/2 cup per person and top with diced cooked bacon and 1/4 oz cheddar cheese.
