Rosemary Garlic Grilled Chicken

Rosemary Garlic Grilled Chicken

Serves: 3-4
  • 1/3 cup lemon juice, fresh
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1-1/2 teaspoons fresh rosemary
  • 2-3 garlic cloves, minced
  • 1 pound boneless chicken breasts, halved, skin removed, or cut into tenders
  • 1 head romaine lettuce
  • 2 large parsnips, julienned
  1. In a medium bowl, whisk together lemon juice, olive oil, salt, pepper, rosemary and garlic.
  2. Place chicken breasts in a 9x13 baking dish, and pour marinade over chicken.
  3. Refrigerate for 2 hours or overnight.
  1. Heat a grill and cook chicken breasts for 10 minutes on each side (less for tenders), or until cooked through.
  2. Cool Chicken and cut diagonally into 1/2 inch thick slices.
  1. Place romaine lettuce on a serving platter
  2. Top with julienned parsnips and sliced chicken
Save the stalks from your rosemary bush after stripping the leaves, and moisten with water. Skewer your chicken tenders with the rosemary stalks for even more flavor. You can also broil these breasts in your oven.
