Pritikin Sweet and Sour Cabbage Soup

Anyone who ever tried the Cabbage Soup Diet for any length of time to shed a few pounds in a hurry (and who among us hasn’t tried a fad diet now and again?) wouldn’t later consider Cabbage Soup a comfort food, and yet, it actually can be.

The Pritikin Longevity Center in Florida says “There’s nothing more comforting than a bowl of Sweet and Sour Cabbage Soup, but the sodium content of many recipes can be a staggering 600 mg per cup. Our Pritikin version has no added sodium but loads of deep, savory flavor.”

This recipe for Sweet and Sour Cabbage Soup serves 10 or more and keeps very well in the fridge for several days, making it a great option to tote to work or school. 

Ingredients

  • 1/2 cup fresh garlic minced
  • 1 yellow onion chopped
  • 1 whole cabbage finely sliced , core cut out
  • 2 bay leaves
  • 1/2 Tbsp basil dry
  • 1/2 Tbsp oregano dry
  • 1 cup tomato puree low sodium
  • 1 quart vegetable stock low sodium
  • 1/4 cup white vinegar
  • 1/4 pound sugar cane stalks split
  • 1 tablespoon Pritikin All-Purpose Seasoning
  • 1 quart water
  • 1/2 tablespoon coriander freshly ground
  • 1 tsp black pepper (freshly ground)

Instructions

  • In a large stock pot, saute garlic, onion, and cabbage on medium-high heat until onions are translucent, about 5 minutes.
  • Add bay leaves, basil, oregano, tomato puree, vegetable stock, vinegar, sugar cane, Pritikin All-Purpose Seasoning, and water. Bring to boil, then simmer for 1 hour.
  • Add coriander and black pepper. Remove sugar cane. Adjust vinegar and seasonings, if needed. Cook for 5 minutes more. Serve.

    I’m not sure I liked this very much. Too sour, which can be adjusted, but I just missed the fatty pork component of sausage, I guess.

    Sugar cane???? Really???? Next time I’m in Hawaii remind me to pick some up🤣 Alternatively, may I sneak in a pinch of brown sugar? Looking forward to trying this recipe though. Be sure to try the Pritikin butterscotch pudding recipe!

      Well that’s a fair point to mention what could be an obscure ingredient for many! Sugar Cane Stalks are in easy supply in Florida, where Pritikin is located, but quite a number of Asian Grocers carry this unique items in the produce section. It is also readily available in California, and other sunny locations. Sugar Cane Stalks are used to produce about 80% of the world’s sugar supply — not just Hawaii! If you are lucky enough to have any Asian markets available, you may wish to check it out for unique produce items. Amazon ships fresh sugar cane stalks, and so do many sellers on Etsy. In the meantime, yes, you can make a substitution pretty easily — best would be some form of raw sugar crystals. While raw sugar is minimally processed sugar that still has some of its molasses, brown sugar is highly processed sugar that has molasses returned to it — so a raw form, like “Sugar in the Raw” would be a better choice.

    This is one ugly soup but you can tell it’s vitamins in a bowl, as my mother used to tell us. very warming and tasty.
