From SELF Magazine (April 2000), we learned that if you do only one yoga exercise, make it the warrior pose — it tones nearly every muscle and improves flexibility and posture, says Vandita Marchesiello of the Kripalu Center for Yoga and Health in Lenox, Massachusetts. Stand with your feet shoulder-width apart and your arms straight overhead, fingers pointing to the ceiling, palms in. Lunge forward with your right leg (don't let your knee extend past your toes), keeping your left foot extended behind you. Hold for three slow, deep breaths. Switch sides and repeat. FOOD FACTS, RECIPES, AND HEALTHY EATING
Each time we find a food fact for you, we profile that food item in two issues. In our last issue, we spoke about QUINOA
(KEEN-wah), which is being called the "supergrain" of the future because it is high in fiber and contains ALL
of the essential amino acids, making it a complete protein. Quinoa seeds are very similar in size and texture to
bulgur or couscous, and are typically cream-colored, although some varieties are black. This grain is easily adaptable in salads and side dishes.
In our last issue, a smoked chicken and quinoa salad. In this issue, a wonderful and beautiful pilaf in time for your Christmas Dinner.
HARVEST QUINOA PILAF
1/3 cup quinoa
1/3 cup bulgur wheat
1/3 cup black japonica rice
1/4 cup dried cranberries
1/4 cup raisins
1/2 cup apple juice or cider
1 small chopped onion
3 cups vegetable broth or water
Directions: Combine cranberries and raisins with the apple juice in a small pan. cover and bring to a boil. reduce heat and simmer gently for about 10 minutes. Saute the onion in a little broth or water. Add the rice, bulgur and quinoa and saute for aobut 4 minutes. Add the vegetable broth and stir in the fruit. Transfer to a baking dish with a cover. Bake in a 350 oven for about 35-40 minutes. Remove from oven (make sure most of the liquid has been abosorbed). Let sit for 5 - 10 minutes. Serve.
This recipe was adapted from Three-Grain Pilaf with Dried Apricots & Cherries which appeared in a recent USA Weekend.
