SPA CUISINE
The holidays always present challenges to those
of us who are watching our weight or trying to eat wisely and nutritiously,
however, these Holiday Recipes from popular spas help you celebrate the season,
and keep it manageable, at the same time.
Canyon Ranch Eggnog
Canyon Ranch Health Resort
Replace the high-sugar, high-fat, and
high-cholesterol store-bought version of holiday eggnog with this healthy
and delicious version from Canyon Ranch.
1 teaspoon
cornstarch
3 egg yolks
5
tablespoons sugar
2 1/2 cups
reduced fat milk
1/4
teaspoon nutmeg
Pinch
cinnamon
1/4
teaspoon rum extract
1/2
teaspoon vanilla extract
Combine
cornstarch, egg yolks and 2 tablespoons sugar in a medium bowl. Whisk
with a wire whip until egg yolks are lemon colored. Combine milk, 3 tablespoons
sugar and nutmeg in a medium sauce pan. Scald milk mixture, stirring occasionally. Slowly add hot milk to egg
mixture, whisking constantly, using wire whip. Pour back into sauce pan
and continue to whisk 2 to 3 minutes over medium heat or until mixture
thickens. Remove from heat and transfer to an ice bath. Add cinnamon and
extracts.
Cool completely. Makes 4 (3/4-cup) servings, each containing
approximately: 170 calories; 24 gm. carbohydrate; 5 gm. fat; 152 mg.
cholesterol; 7 gm. protein; 82 mg. sodium; Trace fiber.
Yogurt and Spiced Apple Salad
Rancho La Puerta Spa
If Waldorf or
Ambrosia-style salads are part of your family's holiday tradition, try
replacing your recipe with this healthy and delicious salad.
Rancho La Puerta Executive Chef Bill
Wavrin, author of the best-selling Rancho La Puerta Cookbook,
comments that this salad is "often requested by returning guests who can't
wait to get back and have it for lunch."
1/4 cup nonfat plain yogurt
1/4 cup unfiltered, unsweetened apple
juice
1 tablespoon raisins or currants
1 tablespoon sunflower seeds
1 teaspoon coconut flakes
1 teaspoon fresh lime juice
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
4 Golden or Red Delicious apples
In a mixing bowl, combine the
yogurt, apple juice, raisins, sunflower seeds, coconut, lime juice, vanilla
and cinnamon.
Core the apples and cut into
thin wedges or bite-size pieces. Toss the apples in the yogurt mixture and
refrigerate for at least 30 minutes before serving.
Serves 6
Cranberry Sweet Potatoes

Instead of mashed potatoes
with butter and gravy, try this tangy and sweet recipe -- which makes a
beautiful presentation when paired with turkey and dressing.
6 Sweet Potatoes
1/2 c Frozen Orange
Juice Concentrate
2 c Cranberries,
fresh or frozen
Equal Sweetener, to
taste (optional)
Bake the sweet
potatoes in a 400-degree oven for about 40 minutes, or until they are
soft. Combine the orange juice concentrate and cranberries in a
saucepan. Bring to a boil. Lower the heat and simmer until the
cranberries pop and the sauce thickens. Add the sweetener, if desired.
Cut the tops of the sweet potatoes open and press open from the bottom.
Top each potato with the cranberry orange sauce.
SPA AT HOME
PUMPKIN PAPAYA FACIAL MASK
If you have been fortunate enough
to visit spas and resorts in exotic locales such as the Pacific Rim, Bali, Hawaii, and Tahiti, you've probably seen a facialist select and mash fresh fruit in front of you for a fresh-on-the spot enzyme mask.
If not, it's easy to recreate this mask at home with this Balinese Pumpkin
Papaya facial mask. Set aside an extra can of pumpkin during your
holiday baking. The following recipe makes enough quantity for three
masks. We recommend you use it up immediately with the help of a few friends,
however, the mask keeps in the refrigerator for up to 5 days.
2/3 cup fresh papaya, mashed
15 oz. can pure pumpkin
1 egg, beaten
To prepare the mask, cut the papaya in half and scoop out the seeds. Scoop out the papaya fruit and mash it well to eliminate lumps in the mask. Beat the egg until it is frothy. Combine
the beaten egg and papaya, and then add the pumpkin, whipping together the
mixture. You may mix the
ingredients in a blender or food processor, if desired.
To prepare your face, wash with your daily cleanser and remove all residual makeup on your skin. Rinse with warm water. It's very important to have clean skin to ensure you get maximum benefits from the facial.
To apply the mask, cover your entire face, being careful to avoid the immediate eye area. If you have sensitive skin, test the mixture on your hand before spreading it on your face. You'll feel some tingling as the enzymes in the pumpkin go to work immediately, gently exfoliating your top layer of
skin. Think of it as a non-abrasive scrub. Leave the mask on for 10 minutes.
After you've relaxed for ten minutes, it's time to rinse. The mask is fairly thick -- head for the kitchen sink.
When all traces of the mask have be en removed, apply your favorite toner and moisturizer.
CRANBERRY SAVORY FACIAL WASH
Did
you know the acidity in cranberries works as a mild astringent and
toner? Did you know that the Greeks originally considered Savory to be an
aphrodisiac? Cranberry and Savory posses antiseptic properties similar to
those found in oregano and thyme, and help cleanse the skin of excess oils.
Put aside some cranberries after you've made your holiday meal and treat
yourself to this spa at home recipe.
1 tablespoon dried savory
leaves, crushed
1/2 cup boiling water
1/2 cup cranberries
Steep the dried savory in boiling water in a small bowl, for fifteen
minutes. Strain the liquid and set it aside. Puree the cranberries in a
blender, and strain the fruit from the liquid. Discard the fruit, and save
the juice. Combine the savory water and the cranberry juice, soak into
cotton pads, or a fine textured washcloth, and press against your face for
fifteen minutes, avoiding the eye area. Remove pads or cloth and rinse with
warm water.
