Holiday Greetings from Spa Index News. In this issue, we'll

Christmas is supposed to be a season of joy, good cheer and optimism

 The first
two weekends in December: December 6-7 and 13-14 are touched
with special holiday magic in the historic seaside city of
Portsmouth, New Hampshire. During these two weekends, the
Music Hall (celebrating its 125th anniversary this year) will
stage its annual performance of "The Nutcracker" ballet, and
Strawberry Banke historic district will offer its annual
"Candlelight Stroll" among 400 years of American buildings.

and the walkways throughout the ten acre site will be flanked by
luminaries. Working as partners again this year, the ballet has

Pumpkin Seed
Blueberry Bran Muffins |

This delicious muffin was created by Carefree
Resort & Villas' (Carefree, Arizona) Executive Chef Armour A.
Black, and is a popular treat for Carefree guests. Treat your
own guests with this warmed treat for breakfast this Christmas.
1 stick Unsalted butter, melted
½ cup Whole milk
2 large Eggs, beaten
1 ½ cups All purpose flour
¾ cup Sugar
2 tsp Baking powder
¼ tsp Salt
½ cup Miller's bran (Miller's can be found at most specialty
food stores)
¾ cup Pepitas (pumpkin seeds) shelled and toasted
1 ½ cups Blueberries, cleaned
In a bowl, stir together the butter, milk and eggs. In a
large bowl whisk together the flour, sugar, baking powder, salt,
bran and pepitas or pumpkin seeds. Add the butter mixture and
stir until the batter is combined and fold in the blueberries.
(Batter will be thick and lumpy). Divide the batter among 12,
well-buttered ½- cup muffin tins and bake in a preheated 425
degree oven for 20 to 25 minutes or until golden. Turn the
muffins out onto a rack and let cool. Makes 1 dozen muffins.
