The health benefits of apples and apple
products were first recorded as early as medieval times,
giving rise to the old English saying "Ate an apfel
avore gwain to bed Makes the doctor beg his bread" and
its more recent variation, "An apple a day keeps the
doctor away." Apples' healthy attributes have received
considerable renewed interest recently, following the
publication of several studies linking apple nutrients
to an impressive range of health benefits (U.S. Apple
Association).
Apples have been used for centuries
for their skin healing powers, as well. Apples are 85
percent water, high in potassium and vitamins A and C,
and contain malic acid -- a natural antioxidant and
exfoliating enzyme. Apple juice can also be used as a
skin toner and bath additive. A cup of apple juice may
be added to warm bath water to both cleanse and soften
your skin. A cotton puff or pad saturated with organic
apple juice is a perfect facial exfoliant for sensitive
skin which can't tolerate abrasive products. Both
pioneer and present day natural beauty recipes tout
apple juice as a hair remedy -- rinsing freshly
shampooed hair with apple juice, or apple cider vinegar,

The Ritz-Carlton's Bachelor Gulch Spa (Beaver
Creek Mountain, Avon, Colorado) is a
21,000-square- foot destination with 19
treatment rooms and a co-ed, rock-lined grotto
with lazy river hot tub (pictured at left). Warm
sunny days and clear cool nights on the western
slope of the Rocky Mountains provide the perfect
setting to grow sweet Colorado apples. This
fall, in celebration of the apple harvest, the
Bachelor Gulch Spa has designed a special
"Apple a Day" package for guests to take
advantage of a variety of unique treatments
inspired by the state's largest fruit crop.
The "Apple a Day" package
includes one night's lodging in a valley view
room, guest choice of either the "Apple Pie a la
Mode", "Apple a Day", or an equivalent treatment
at The Bachelor Gulch Spa and overnight valet
parking. The rate for this package is $315 per
room, per night based on double occupancy,
through Nov. 21, 2003.
The "Apple a Day" treatment
exfoliates, cleanses and nourishes the skin. The
50-minute treatment begins as an apple exfoliant
is massaged into the skin, followed by the rush
of water cascading down over the body while in
the waterfall shower. Rich, hydrating lotion is
then worked into the skin with the treatment
ending with a light spray of refreshing apple
spritz.
The "Apple Pie a la Mode"
treatment, newly introduced this Fall, uses
custom blended products specially designed for
The Bachelor Gulch Spa. This treatment allows
guests to enjoy a special slice of Colorado. The
50-minute treatment begins as a cinnamon sugar
Apple Pie Polish is gently massaged into the
body to exfoliate dead cells. Guests then enjoy
the added benefit of a hydrotherapy massage as
they lay under the Vichy shower with its
alternating water pressure and temperature
cascading over the body. Finally, luxurious
Vanilla Ice Body Cream is applied, leaving
guests smelling the rich scent of sweet vanilla.

Roasted Butternut Squash and Apple Soup |

"When frost first finds your morning windshield, it
falls upon the pumpkin as well ... This is our
favorite Fall and Winter soup, and an homage to
all things autumnal." -- FRESH: Healthy
Cooking and Living from Lake Austin Spa Resort,
Austin, Texas.
INGREDIENTS:
3 cups chopped, seeded and peeled butternut
squash
1 cup chopped onion
1 baking apple, cored and quartered (Macintosh,
Jonathan or Granny Smith)
1/2 teaspoon canola oil
1 tablespoon minced fresh gingerroot
1 garlic clove, minced
6 cups vegetable stock
1 tablespoon cornstarch
1 tablespoon curry powder
1/8 teaspoon cayenne pepper
1/2 cup evaporated milk
2 ounces reduced-fat cream cheese, cubed
salt and pepper to taste.
PREPARATION: Combine the
squash, onion, apple and canola oil in a bowl.
Toss to coat the vegetables. Arrange the
vegetables in a single layer on a baking sheet.
Bake at 400 degrees for 30 minutes. Remove the
roasted vegetables to a blender or food
processor and add the gingerroot, garlic, and
about 1-1/2 cups of stock. Puree, adding more
stock if necessary. Use a little of the
remaining stock to deglaze the baking sheet;
pour into a large soup ot over medium heat.
Combine 2 tablespoons of the stock with the
cornstarch in a bowl and whisk until smooth.
Toast the curry powder in a dry skillet until it
begins to give off a nutty fragrance. Add the
cornstarch mixture, curry powder, remaining
stock, cayenne pepper, salt and pepper to the
soup pot. Cook until slightly thickened,
stirring frequently. Reduce the heat to simmer
and cook an additional 20 minutes. Add the milk
and the cream cheese, heat until the cheese
melts. Adjust seasonings. Serve hot, garnished
with minced chives, if desired. 12 servings. Per
serving: 59 cal; Prot 2 g; Carbo 10 g; Fat 2 g;
22% Cal from Fat; Sod 165 mg.

8 Tart Apples
1 Cup Orange Juice

Granola.
PREPARATION: Preheat oven to
350 degrees. Peel, core and thinly slice the
apples. Combine orange juice, maple syrup and
arrowroot (corn starch). Toss with apples. Place
apple mixture in 350 degree oven for 40 to 45
minutes or until apples are very tender.
Sprinkle the granola and sliced almonds over the
apple mixture just before serving. Makes 6 to 8

Apple Skin Toner |
