"I had a Kiwi Scrub at a spa, which used the tiny seeds, which are even smaller than poppy seeds, in place of larger, coarser scrubs. My sensitive skin really glowed, and I liked it. I then had a beautiful kiwi chicken salad for lunch. I'd like to feature more kiwi at home, now that I've tried it. Please feature some kiwi recipes and kiwi products."

Thank you for writing, Alice! We're happy to share some information, a few recipes, and a few at home spa treatments.

A Kiwi was originally known as a "Chinese Gooseberry" and was first exported to the United States in 1904.

New Zealand kiwifruit was first served at Trader Vic's in San Francisco, California in 1961.

Kiwi is grown in several countries in the Southern Hemisphere, and is also available in abundance in California. Most crops are grown in New Zealand, the United States, Italy, Japan, France, Greece, Spain, Australia, and Chile.

California kiwi is available for up to eight months - from October through May. The New Zealand season is exactly opposite. The combination of the two harvesting seasons allows consumers to enjoy fresh kiwifruit all year.

Kiwi is ripe when slightly soft to the touch. Ripe kiwis can be stored in the refrigerator for up to 3 weeks. The easiest way to peel a kiwi is to first cut off both ends, insert the bowl of a teaspoon up under the peel, carefully run it all the way around the fruit just under the peel, and then slip it off.

Creamy Kiwi Dressing

Canyon Ranch Spa

This dressing can be used on salads of all types, or as a sauce on cold fish, poultry, or meat. Also, by substituting white wine or pineapple juice for the rice vinegar called for, it can be served as a dessert or a chilled fruit soup. The exotic sweet-tart flavor of the kiwi works equally well in both sweet and savory dishes, making it an exceedingly versatile ingredient.

3 kiwi fruit, peeled and finely diced (9 ounces or 1 cup diced)
1 banana, mashed
3/4 cup non-fat vanilla yogurt
2 tablespoons rice vinegar
1/2 teaspoon coconut extract

Combine all the ingredients and mix well. Refrigerate, tightly covered, until cold. Serve well chilled. Makes 2 cups. Each serving contains approximately: Calories:46, Fat: negligible, Cholesterol:0, Sodium:18 mg, Carbohydrates:10 g, Protein:2 g.

KIWI ON SNOW

Golden Door Spa, Escondido, CA

4 ounces of Neufchatel low-fat cream cheese
4 ounces ricotta cheese
1/4 cup low-fat milk
2 tablespoons honey
1 tablespoon Grand Marnier orange liqueur
1 tablespoon fresh lemon juice
1 tablespoon lemon zest
1 tablespoon grated or shredded fresh coconut, lightly toasted
2 kiwi fruit, peeled and sliced
4-8 raspberries or small strawberries.

In a food processor, blend cheeses, honey, and milk. Add liqueur, lemon juice and zest, and blend briefly. Spoon this creme into 4 shallow dessert dishes, preferably chilled. Divide and sprinkle toasted coconut over center of each dish of creme. Arrange sliced kiwi and berries over the coconut. Serve immediately. Makes 4 portions at 122 calories per portion.

Strawberry Kiwi Mock-Margarita

1-1/2 cups cold water
1 cup cold orange juice
2 Tbsp. lime juice
1 tub CRYSTAL LIGHT TROPICAL PASSIONS Strawberry Kiwi Flavor Low Calorie Soft Drink Mix
1 qt. (4 cups) ice cubes

PLACE water, orange juice, lime juice and drink mix in blender container; cover. Blend until drink mix is dissolved. ADD ice; cover. Blend on high speed until smooth. Citrus juices never tasted so good. This mock cocktail is a good source of vitamin C, naturally fat free and low calorie. 1/2 fruit exchange, or, 25 calories per serving.

SPA AT HOME

NEW ZEALAND KIWI ASTRINGENT FOR OILY SKIN
Natural Beauty for All Seasons, by Janice Cox

1 cup boiling water
1 ripe kiwi fruit, peeled and mashed
1 tablespoon vodka

Pour the boiling water over the mashed kiwi fruit in a heavy ceramic bowl and let sit until cool, which is about 20-30 minutes. Strain the mixture well to remove all fruit solids. Add the vodka and stir. Apply to the skin with a clean cotton pad. You may rinse your face with cool water if you have sensitive skin. Store in the refrigerator and use within 10 days.

KIWI FACIAL CLEANSER FOR NORMAL OR DRY SKIN

1 kiwi fruit
2 tablespoons of plain yogurt
1 tablespoon orange water
1 tablespoon apricot or almond oil
1 tablespoon honey
1 teaspoon finely ground almonds
2 drops orange (or your favorite citrus) essential oil

Puree the kiwi fruit in a food processor until liquid. During processing, add yogurt, orange water, almond or apricot oil, and ground almonds. Process until thick and cream like. Add essential and stir to mix. To apply, massage gently over neck, face and décolleté to cleanse. Rinse well. Makes one application.
