Mountain Trek Thai Chicken Salad

This vibrant Thai Chicken Salad is bursting with flavor and lean, grilled protein.  It’s a perfect summer lunch or dinner.  Don’t be discouraged by the lengthy list of salad dressing ingredients.   Asian flavored dressings fare very well with a “touch of this and a touch of that” and can be cobbed together from your favorite flavor profiles in your pantry.  Use your own favorite purchased Asian dressing if you prefer, or just lime juice and seasoned rice vinegar.

Spa Index Tip:  Buying full size items for salads with many ingredients can be both costly and wasteful, particularly if you live alone or have a small family. Instead, visit your local organic salad bar at good grocery store and stock up on just the most interesting toppings or ingredients you wouldn’t normally have on hand in full amounts. Use condiment and dressing cups or multiple boxes, if necessary, to keep delicate flavors and ingredients separate (the weight of the boxes is really negligible). You’re not building a take-out salad at this stage; you’re building a cold salad pantry. For this reason, skip the dressings (which wilt and spoil your ingredients quickly). Keeping these undressed toppings fresh in your fridge for a longer time lets you create your own mini salad bar.

Ingredients
For the Salad
  • 16 oz. chicken breast
  • 1 teaspoon sesame oil
  • 1/2 tablespoon tamari
  • 1/3 teaspoon dried ginger
  • 1/3 teaspoon dried garlic
  • 1 - 1/4 cup snow pea pods- halved
  • 2 cup shredded kale
  • 1/2 cup green onions – chopped diagonally
  • 2 cups Chinese cabbage – (Savoy) – shredded
  • 3/4 cup water chestnuts – sliced
  • 1 cup celery diagonally sliced
  • 1 cup carrot – grated
  • 3/4 cup green beans – diced & blanched
  • 3/4 cup grated radish
  • 2 tablespoons sesame seeds – toasted
For the Dressing
  • 2 tablespoon rice vinegar
  • 2 - 1/2 tablespoon fresh lime juice
  • 3/4 teaspoon lime zest
  • 1/3 teaspoon dried red pepper flakes
  • 1 tablespoon honey
  • 3/4 teaspoon toasted sesame oil
  • 1 - 1/2 tablespoons omega 3-6-9 oil
  • 2 tablespoon olive oil
  • 2 tablespoon tamari
  • 1/2 tablespoon dried ginger
Method
  1. Bake or grill chicken (covered) until cooked thoroughly
  2. Slice cooled chicken and keep refrigerated until ready to use
  3. Prepare dressing ingredients and set aside
  4. Mix together all salad ingredients
  5. Plate with greens and chicken
  6. Sprinkle with toasted sesame seeds
