Red Mountain Green Chili Pork Posole

Posole is a traditional latin american dish with ancient origins. Maize was a sacred plant for the Aztecs and others in  Mesoamerica, and pozole was created as a celebratory meal for special occasions.  The Aztecs included human-shaped dumplings out of masa dough.   Posole is now a favorite entree in many Mexican restaurants.  The maize is represented by hominy kernals.  Often, you will see it garnished with avocado.  This is a healthy fat, so if you can spare the calories, by all means add it to this recipe for Red Mountain Green Chili Pork Posole.

Ingredients

  • 1/3 whole onion - diced
  • 1/2 stalk celery - diced
  • 2 1/2 teaspoons fresh garlic - chopped
  • 1 1/4 teaspoons extra virgin olive oil
  • 1/2 lb pork loin - lean, boneless
  • 3 1/2 oz. hominy - canned, drained, rinsed
  • 1/2 cup green chiles - canned, drained, diced
  • 3 oz. tomatillos
  • 1 whole bell pepper - orange or yellow, chopped
  • 1 whole carrot - chopped
  • 2 teaspoons cumin
  • 2 teaspoons chile powder
  • 1 Pinch Sea Salt
  • 1 Pinch black pepper (freshly ground)
  • 3 cups chicken stock - skimmed of all fat
  • 2 tablespoons fresh cilantro - chopped

Instructions

  • Sauté diced onions, celery, carrot, bell peppers, and garlic in oil until tender.
  • Add diced pork and continue cooking until meat has browned.
  • Add hominy, green chilies, tomatillos, cumin, chile powder, salt, pepper and chicken stock and simmer 1 hours
  • Mix in the cilantro and serve.

You'll note this is calculated using 1/2 cup as a side serving, a "soup" if you will.  It can easily be converted to an entree by increasing portions and multiplying the calories accordingly. 
You can also customize this dish so many ways as shown below.   Make it thicker and heartier by adding less broth.  Make it spicier by adding red chili pepper sauce.   Use chicken instead of pork! Top with Avocado, Cabbage, Limes, and Shredded Tortilla Strips!

    Yeah, really really good, but no way a half cup even as a side dish. I needed the whole recipe for myself, but shared with my wife anyway. Used limes, too. And an avocado slice.
