Eggless Caesar Salad Dressing

Use this wonderful egg free Caesar Salad Dressing on salads, fish, chicken, or to dip roasted vegetables as a snack.


Eggless Caesar Salad Dressing

  • 1 - 1/2 tablespoons garlic, minced
  • 4 - 1/2 tablespoons lemon Juice
  • 3 fillets anchovies
  • 2 - 1/2 tablespoons Dijon mustard
  • 14 oz Soft Tofu
  • 1 tablespoon grated Parmesan cheese
  • 2 teaspoons Worcestershire sauce
  1. Combine all ingredients in blender or food processor and purée.
  2. Adjust flavors as needed.
  3. Toss with crisp romaine leaves and freshly grated Parmesan cheese.
Anchovies get such a bad rap, and we were guilty of the same closed mindedness until we saw a television program with Chef Jamie Oliver many years ago. He was preparing a vegetable dish and he pointed out that anchovies, really, are just a savory and salty condiment, not much different than soy sauce, but so much more flavorful, and they melt into your dish and just add a flavor profile which can't be matched. When you add a few to a recipe it is not "fishy." It is salty.

We tried them. We loved them, we eat them far more often (even on pizza). We can't now imagine a Caesar salad without anchovies in both the dressing and as a garnish.
