Cranberry Ginger Salsa

This sharp and tasty salsa is great over fish, chicken, or even a block of fat free or reduced calorie cream cheese, with veggies to dip.  Great for the holidays.

Cranberry Ginger Salsa

Ingredients
  • 8 ounce bag of frozen cranberries
  • 4 green onions
  • 2 Jalapeño peppers
  • 1/3 cup sugar or Splenda, Stevia, or other no-calorie sweetener to taste
  • ¼ cup fresh mint leaves
  • juice of 2 limes
  • 1 tablespoon grated fresh ginger root
Method
  1. Combine all ingredients in salsa maker or small food processor.
  2. Chill 2 hours and serve.
