Coconut Leek Soup

Serves: 3-4
Ingredients
  • 1 tablespoon extra virgin olive oil
  • 3-4 large leeks, cleaned and chopped
  • 3 garlic cloves, minced
  • 1 head cauliflower, chopped
  • 2 cups vegetable broth
  • 1 15-oz can coconut milk (BPA free can)
  • sea salt
  • pepper
Method
Wash the Leeks
  1. Chop off and remove the dark green portion of the leeks and discard for compost or save for making veggie broth.
  2. Remove the root and split the leek down the middle. Wash the leek in a bath of cold water, making sure to remove any sand and soil between the layers.
  3. Rinse thoroughly and chop.
Saute the Veggies
  1. In a large soup pot, add the olive oil over a medium low flame. When the oil is hot but not smoking, add the chopped leaks and garlic.
  2. Saute for 8-10 minutes until the leeks are soft and sweet.
Prepare the Soup
  1. Add the chopped cauliflower, vegetable broth and coconut milk to the leeks and garlic. Cover and bring to a boil.
  2. When the soup has boiled, turn down the flame and allow to simmer until the cauliflower is soft.
  3. When it is soft, remove the soup pot from the heat and allow to cool
Blend the Soup
  1. When the soup is cool, ladle it into a blender, in batches, and blend (or you can use a stick blender in the pot).
  2. Add salt and pepper to taste.
  3. Serve immediately cool, or warm if desired.
Notes
Try adding a shake or two of your favorite curry powder!
