Chicken Caesar Pita Pizza

Chicken Caesar Pita Pizza

Ingredients
Spa Caesar Dressing Ingredients
  • 1-1/2 tablespoon minced garlic
  • 4-1/2 tablespoon lemon juice
  • 3 filets of anchovy
  • 2-1/2 tablespoons Dijon mustard
  • 14 oz soft tofu
  • 1 tablespoon Parmesan cheese
  • 2 teaspoons Worcestershire sauce
Pizza Ingredients
  • One large wheat pita pocket
  • 4 tablespoons Parmesan Cheese, shredded
  • 1 cups Romaine Lettuce, cut
  • 1 tablespoon Eggless Spa Caesar Dressing
  • 1/4 cups grilled, sliced chicken breast
Method
  1. Combine all dressing ingredients in blender or food processor and purée.
  2. Adjust flavors as needed.
  3. Toss with crisp romaine leaves and freshly grated Parmesan cheese. Set aside.
  4. Pre-heat oven to 425°.
  5. Split pita pocket into two thin pieces (maintaining the circle).
  6. Sprinkle Parmesan across each half equally.
  7. Bake pita for 7 minutes, or until cheese is browned and bubbly; remove from oven.
  8. In chilled mixing bowl, combine chicken, romaine and dressing and mix well.
  9. Top pita crusts with divided chicken Caesar salad and serve.
