Caprese Eggs Benedict | Movara Fitness Resort

Serves: 2 servings
Ingredients
For the Base
  • 1 English muffin
  • 2 poached eggs
  • 4 slices tomatoes
  • 2 slices pancetta
  • ½ oz fresh mozzarella cheese
  • Hollandaise
  • Pesto Sauce
For the Hollandaise Sauce
  • 2 egg yolks
  • 2 teaspoons butter
  • 1/2 cup milk
  • 1 teaspoons rice wine vinegar
  • Pinch cayenne pepper
  • Salt and pepper to taste
Method
Poach the Eggs
  1. Using your favorite recipe, set two eggs to poaching, and make the Hollandaise.
Make the Hollandaise
  1. Using a double boiler melt butter and slowly whisk in egg yolks.
  2. Add milk, vinegar and cayenne pepper.
  3. Bring to a low simmer to thicken -- about 1-2 minutes.
  4. Season with salt and pepper.
Assemble the Muffins
  1. Toast English muffin, and place 1 slice of pancetta on each half.
  2. Top pancetta with a poached egg, 2 slices of tomato and 1 slice of fresh mozzarella.
  3. Spoon 1/2 oz of the Hollandaise over the stack.
  4. Drizzle on a little bit of your favorite pesto.
Notes
Eggs Benedict are traditionally served with a poached egg, but by all means substitute gently scrambled if you don't care for runny yolks, or steam-fried (our favorite method), which gives you a firmer white, but a runny yolk. To steam fry an egg, add just a smidge of bitter to a skillet and slip in an egg. When the white is nearly set, add 1-2 teaspoons of water to the skillet and immediately cover it with a glass lid. The steam will surround the egg and cook the rest of the white, and barely set the yolk. When you see the top of the yolk turn opaque and white, the egg white has been set, and you can slip the egg out of the skillet without having to flip it. Perfect every time, fully cooked white and runny yolk.
