High Protein Breadless Pudding

It isn’t pretty — but it sure is tasty.   This reader contributed recipe is bariatric friendly — high in protein, low in carbs and sugar.  It does have heavy cream so the fat grams will be higher than your average healthy dessert, but in moderation this can be an enjoyable dessert.

Our reader notes:  “The texture is so much like bread pudding that it is bizarre–also makes the house smell awesome.”

We also found a copy of this recipe and a photograph of the recipe on Linda’s Low Carb Recipes (pictured).  We think this would make a nice addition to the dessert table for those on a bariatric eating plan.

 

Breadless Pudding

Ingredients
  • 3 eggs
  • 3/4 cup heavy cream
  • 3/4 cup water
  • 1 cup cottage cheese
  • 1/2 cup artificial sweetener (stats based on Splenda)
  • 1 teaspoon vanilla
  • cinnamon to taste
  • cooking spray
Method
  1. Place all ingredients into a mixing bowl and blend several minutes until as smooth as possible.
  2. Pour into a 8X8 casserole dish sprayed with cooking spray and bake at 350 degrees for approximately 50 minutes or until well browned on the top -- oven temps really vary and you'll need to adjust accordingly.
  3. Scoop out approximately 8 portions.
Notes
Do not freeze.
