  • 1 T. grapeseed oil
  • 4 C. Sliced Crimini mushrooms
  • 2 C. yellow onion diced
  • 3 C. Roma tomatoes diced
  • 1 ½ C. Sherry cooking wine
  • 2 C. beef stock
  • 4 sprigs thyme
  • 16 oz. top sirloin
  • 8 C. Butternut squash
  • 4 Servings Green Beans

  2. Slice top sirloin into quarter inch strips, add to braising liquid, cover and let simmer on very low heat for 2 ½ -3 hours. Stir occasionally. If sauce is reducing too quickly, reduce heat. You can also add more beef stock or sherry.

  5. Steam or boil noodle squash until al dente.
  6. Plate 4 servings with squash, beef, and serve with steamed green beans dressed with Pumpkin Seed Pesto.
