TOFU GUACAMOLE
Canyon Ranch
1/2 cup packed finely sliced
spinach leaves 1/3 cup frozen peas 2 tablespoons light silken tofu 1 1/2 tablespoons fresh lemon juice pinch salt pinch ground cumin pinch cayenne pepper pinch chili powder dash Tabasco sauce 6 tablespoons mashed avocado 3 tablespoons minced tomato 2 tablespoons hot salsa, or to taste 3 tablespoons minced white onions 1 tablespoon chopped cilantro 2 teaspoons chopped scallions

This recipe incorporates the avocado of traditional guacamole with other green vegetables plus tofu in order
to lower the fat content of the dip. |

1. Steam the spinach until wilted. Remove from the heat, let cool, then squeeze with your
hands to remove excess water.
2. Briefly steam the peas. Rinse under cold water.
3. Combine the spinach, peas, tofu, lemon juice, seasonings, and avocado in a food processor and puree.
4. Spoon the mixture into a bowl. Add all the remaining ingredients and mix to combine.
Makes 11/2 cups, or 12 (2-tablespoon) servings

Tofu ranks high in nutritional characteristics. Not only is it a source of high-quality protein, it's
loaded with iron, B vitamins, and potassium. If curdled with calcium salts it will also contain impressive amounts of calcium. Yet tofu is fairly low in calories and saturated fat,
contains no cholesterol, and is very low in sodium. All soy products, like tofu, are rich in phytoestrogens, plant hormones believed to reduce the risk of breast and prostate
cancer, and to minimize the mood swings and hot flashes associated with menopause. Tofu is available in firm, regular, and soft consistencies. Silken tofu has a satin-smooth,
creamy texture, while other types of tofu tend to be a bit grainy. Tofu has a bland, slightly nutty flavor that gives it a chameleon like capability to take on the flavor of the
food with which it is cooked. After opening, tofu will keep for several days if stored in the refrigerator, covered with water that is changed daily. Tofu can be frozen up to 3
months, but freezing will change its texture, making it slightly chewy. |
