Occasionally we share higher calorie recipes from a spa or resort destination because it is was requested by a reader or is a guest favorite in the dining rooms of spas and resorts which don't necessarily cater to a lower fat or specific diet plan. Most healthy eating plans will agree that an occasional indulgence is tolerated and encouraged if it will help you "stay on program."
OLE'S SWEDISH HOTCAKES Enjoyed by SpaIndex.com editorial staff when they were children vacationing in Mendocino. A long-standing favorite menu item at the Little River Inn. This recipe serves four. For best results, pay attention to all four of the secret tips!
Secret Tip #1:
Make batter 12 to 24 hours before serving and refrigerate
Secret Tip #2:
Be very gentle when folding in egg whites
Secret Tip #3:
Be very gentle when folding in melted butter. Do not overmix.
Secret Tip #4:
Stir batter very gently before griddling. For perfectly-textured hotcakes, the batter should have tender pockets of butter throughout.
1. Mix dry ingredients together: 1 cup flour
1 teaspoon sugar
1/4 teaspoon salt
1 teaspoon baking powder
2. Mix wet ingredients together 1 - 1/2 cups milk
1/2 cup half and half
3. Add wet to dry ingredients and mix gently.
4. Separate 3 eggs 5. Whip 3 egg whites until stiff. Reserve. 6. Beat 3 egg yolks. 7. Add egg yolks to batter. 8. Gently fold in whites of eggs to batter. 9. Melt 3/4 cube (6 tablespoons ) butter. 10. Gently stir butter into batter. Do not overmix.
11. Refrigerate batter overnight. 12. Stir very gently before griddling. Do not overmix. 13. For perfectly-textured hotcakes, the batter should have tender pockets of butter throughout. |
