 CHIPOTLE ROASTED ALMONDS

1 egg white
1
tablespoon water
3 cups whole, natural almonds
1/4 cup sugar
3 teaspoons ground chipotle chili pepper
2 teaspoons coarse salt |
| Preparation: |

Preheat oven to 275°F.
Line a sided sheet pan with foil or parchment paper. Whisk egg white
and water together until foamy. Add almonds and toss to coat. Transfer
almonds to a sieve, toss gently and let drain. Stir together sugar,
chipotle and salt. Add almonds and toss to coat. Spread almonds on a
prepared sheet pan in a single layer; bake for 55 to 60 minutes,
stirring occasionally, until they are dry and toasted. Cool
completely, and serve immediately or store airtight up to 1 week. |
