 PEANUT BUTTER COOKIES

3/4 cup Low-Sodium Peanut Butter |
2 teaspoons Vanilla Extract
|
|
1/2 cup Barley Malt |
1 cup Oatmeal Flakes |
|
1/4 cup Canola Oil |
1/2 cup Sucanat |
|
2 teaspoons Baking Powder
|
2 tablespoons Vanilla Soy Milk |
|
1/2 cup Unsalted, Roasted Peanuts |
1/2 cup Carob Chips, (optional) |
|
3/4 cup Whole Wheat Pastry Flour |
|
|
Directions
1. Preheat oven to
325 degrees. Blend together the first 5 ingredients in a large mixing bowl.
2. Combine in the sucanat, oatmeal, wheat flour and baking powder in another bowl.
3. Fold the dry mixture into the peanut butter mixture, add the peanuts and carob chips if
desired and mix well.
4. Spoon the batter onto an oiled cookie sheet and flatten slightly with the back of a spoon or
fork.
5. Bake for 15-18 minutes, allow to cool before serving.
Makes about 18 cookies. |
