GRILLED TURKEY BURGER WITH WARM SLAW

SpaIndex note: This burger starts on the grill and ends in the oven. Ground Turkey is very lean and as a result, tends to be dry when grilled to doneness. By reserving most of the cooking for the oven, the grill gives the burger a fresh taste outdoorsy taste, but the oven retains the moisture. By all means finish your burgers entirely on the grill, or entirely in the oven, as you prefer or the season dictates.

Servings: 8

1 teaspoon dried or 1 tablespoon fresh oregano
1 teaspoon dried or 1 tablespoon fresh thyme
8 ground turkey patties (2 oz each), ready to cook
2 tablespoons olive oil
8 cups cabbage, sliced thin
1 cup carrot, grated
2 tablespoons prepared horseradish
2 tablespoons red wine vinegar
1 teaspoon crushed red pepper
3 teaspoons Worcestershire sauce
2/3 cup mayonnaise, imitation, no cholesterol
2 tablespoons Dijon mustard
8 whole wheat buns
Cooking spray

Preheat grill and coat with cooking spray. Grill turkey burgers until lightly browned, but not fully cooked.
Prepare a baking pan and preheat oven to 350.
Place grilled and browned turkey burgers on baking sheet and sprinkle with oregano and thyme. Bake for 20 to 30 minutes until cooked thoroughly.
Heat oil in a large skillet over medium-high heat. Add cabbage and next 5 ingredients (carrot through Worcestershire sauce); cook 2 minutes, stirring frequently, until warm, soft, and wilted. Remove from heat.
Combine mayonnaise and mustard, spread mixture evenly over top and bottom buns.
Place one burger on each bottom bun.
Divide warm coleslaw mixture evenly among turkey burgers.
Cover with top bun.
