PICKLED GREEN TOMATOES
1/2 cup White Wine
1/2 cup Red Wine Vinegar
1 tsp. Whole Coriander Seed
1 tsp. Black Pepper Corns
2 tsp. Fennel Seed
1/2 Tbsp. Kosher Salt
1 sprig Fresh Thyme
2 sprigs Fresh Rosemary
2 each Green Tomatoes (sliced 1/4" thick) DIRECTIONS Combine the first 8 ingredients into a sauce pan and bring to a boil. Pour the hot liquid over the tomatoes and let them cool. Marinate overnight in the refrigerator. PICKLED RED ONIONS 1 each Red Onion
1 cup Red Wine Vinegar
1/2 cup Water
1/2 lb. Sugar
Pinch of Thyme, Bay, and Parsley Seasonings DIRECTIONS Bring water, vinegar, sugar and seasonings to a boil. Slice onions thinly on a slicer. Pour hot liquid over the onions.
Cover and cool in refrigerator overnight. |
