The Bahamas consist of over seven hundred small islands of coral formation. The Lucayan Indians occupied the Bahamas from as far back as 800 A.D. These people hunted for their foods on the land and the sea. Turtles, wild boar, shellfish such as Conch and countless other species of fish such as shark, grouper, crab, snapper, Cray fish and bonitos are among the foods found there. There are some Bahamians who believe that Conch is an aphrodisiac and is one of the favorite foods.

CONCH CEVICHE

2 pounds Chopped Conch #1 *
10-12 oz. Chopped Onions (1 Large)
3 oz. Chopped Red Bell Pepper
3 oz. Chopped Yellow Bell Pepper
3 oz. Chopped Orange Bell Pepper
3 oz. Chopped Green Bell Pepper
2 ea. Cachucha Pepper
2 Cup Lemon Juice
2 Cup Orange Juice
1/2 teaspoon Black Pepper
1 1/2 tablespoon Salt
1 1/2 tablespoon Hot Pepper Calypso Sauce (Tropical pepper brand)
1 tablespoon Hot Mustard Sauce

*Where conch is not available you can easily substitute lobster, which has a similar texture. 


Place chopped conch in a bowl, add lime juice, chopped peppers, onion and add orange juice. Mix well and all spices. Mix all the ingredients together and let it sit for 2 hours.

Makes approximately 5 1/2 lbs.


BAHAMAS CONCH SALAD
 

4 conch, cleaned & skin removed*
1 small onion
1 stalk celery
½ small sweet pepper
1 large tomato
½ cup sour orange, lemon or lime juice
salt, pepper & hot pepper to taste

*Where conch is not available you can easily substitute lobster, which has a similar texture. 

Pound the cleaned and skin conch meat with a metal mallet until its very thin and begins to come apart. Cut the conch, onion, celery, sweet pepper & tomato into small cube pieces. Combine all ingredients & mix well.  This recipe intends for the sour juices to cook the seafood like "ceviche."
