People often say that vegetarian dishes seem complicated, take too long, or don't really taste good. Not so! Check this one out, which is a customer favorite at Mandala Wellness Retreat.
Serves 4 1 large or 2 small avocados, peeled, pitted and diced
1 15 oz can chickpeas, rinsed and drained
3 tablespoons chopped fresh cilantro
4 teaspoons fresh lime juice
a clove garlic, minced
8 corn taco shells
2 cups baby salad greens
1 cup fresh-cut prepared salsa (we use mild)
1/2 cup sour cream
Shredded Mexican cheese
Place avocado in small bowl and mash with fork. Stir in chickpeas, cilantro, lime juice and garlic, season with salt. Set taco shells in napkin-lined basket. Place salad greens, salsa, shredded Mexican cheese and sour cream in separate bowls, set out alongside the chickpea / avocado mixture, and let everyone create their own tacos. kids LOVE these! |
