Banana Soy Pancakes
Topnotch at Stowe Resort & Spa
(Vermont)
1-cup soy flour
½ Tbsp. sugar
1 Tbsp. baking powder
½ tsp. salt
½ tsp. baking soda
1 ½ cups soy milk
1 Tbsp. vegetable oil
¼ cup bananas
¼ cup oats
Mix dry and wet separately.
Gradually add dry to wet making a thin batter
Fold in optional ingredients. Cook as usual for pancakes.
