50 Calorie Fat Free Curry Carrot Soup

This may be the easiest and fastest Zero Fat Carrot Soup you can make.  With just a handful of ingredients and spices, you have a zesty fat-free soup to tote to work or school — a 1 cup serving is between 45-50 calories.    You can substitute the curry powder for other spice blends, it’s a very adaptable recipe.

Equipment

  • Immersion Blender

Ingredients

  • 2 lbs baby carrots, or, the same amount of cleaned, fresh, slender carrots
  • 1 medium yellow onion - sliced
  • 8 cups water
  • 2 tablespoons garlic paste
  • 1 tablespoon curry powder
  • 2 tablespoons honey - or to taste

Instructions

  • Place all ingredients except the honey in a large saucepan and cook over medium heat until the carrots are soft.
  • Turn off the heat and add the honey. Use a blender or immersion blender to puree the soup.

    We call this “Detox Soup” because it works so well to make us feel nourished and clean when we’ve been off-program or had holiday meals which were a culinary investment, so to speak.  If we celebrated hard, we fix this soup and keep it on hand for a few days, sipping it for both lunch and dinner. We also have made swaps with the curry powder. We used BBQ seasoning once when we had it, which was also pretty good. We also used Penzey’s Greek Seasoning Once, which was very good, as well– but always be sure to check for low-sodium blends!
